FSHN 5600: Global Nutrition, Health and Sustainability

An overview of current global nutrition and health-related issues in relation to the Sustainable Development Goals. The etiology, epidemiology, and program/policy responses to topics will be discussed, in relation to the sociocultural, biological, economic, and environmental context of health and disease. Topics include childhood malnutrition, growth stunting, micronutrient deficiencies, global nutrition transition, parasitic infections, sanitation, and chronic disease incidence. Participatory course, students will engage in a series of class activities, discussions, and presentations. Meets International Perspectives Requirement. Meets International Perspectives Requirement.
